Each version of Exchange uses its own EMC to administrate version specific objects such as servers while some global settings may be managed either version of the EMC.
In this video Nicolas Blank introduces co-existence between Exchange versions using the Exchange Management Consoles.

How Do I: Get Started with DAG's in Exchange 2010?

Database Availability Groups (DAGs) supersede all previous Exchange 2007 High Availability and Disaster Recovery options, replacing CCR, LCR and SCC technologies. Unlike previous HA and DR technologies, DAG's are able to co-exist with other exchange roles, lowering the minimum required number of Exchange servers from 4 down to 2.
In this video Nicolas Blank introduces DAGs and demonstrates how to get started with configuring a basic DAG scenario of two replicated databases. The servers both host HUB and CAS roles in conjunction with the mailbox role. No other prerequisites are required excepting Windows Server 2008 Enterprise with Failover Clustering preinstalled.
