It's in Format | Slide Design. At the top of the pane, you'll see "used in
this presentation." Select your slide in the thumbnail pane on the left, and
in Format | Slide Design, click the arrow that appears when you hover over
the design you want to apply. Click that and choose "apply to selected
slides."

Yeah, it's much more obvious in PPT 2007. Just click "layout" on the Home
tab and the different possible masters with their collateral layouts will be
displayed for you to choose from.

But where are the "Format" and "Slide Design" menu items? I can't even find
reference on the MS help search!

Which version of PPT are you using? Format | Slide Design is in PPT 2003.
Click the Format menu, then click Slide Design.

In 2007, click Layout on the Home tab.

i want to automatically set the color of text in all slides. In 2003, when i
applied a master, and applied that master, it would set the text color, as
well as other aspects of the slide (font size, text location, slide title
font and color, etc.) How do i do that with 2007?

You do the same thing on the slide master (and slide layouts) in PPT 2007.
They're under View | Slide Master.

The colors you want to choose from are at the top and labeled "theme
colors." Choosing from the top row in there applies color scheme colors --
chosing from the palatte below gives you tints and shades of the color
scheme colors.

In PPT 2007, the slide layouts (small thumbnail) inherit settings from the
slide master (big thumbnail).
