Oven Baked or Stove Top Courgettes

Follow this quick and easy recipe for a delicious side dish or main entree. Courgettes are available nearly all year round and make a healthy and nutritious meal.

Slice the courgettes lengthwise and remove the seeds and pith. Sprinkle some salt over the shells and let sit for a few minutes, then fill the hollow with diced vegetables, mixed rice or minced beef and place in oven at 375F for 25 minutes. Top with grated cheese. Alternatively, if you are strapped for time try this quick and easy recipe.

  • 2 small courgettes, sliced ¼ inch thick
  • 1 medium onion, sliced into ¼ inch wedges
  • 1 tbsp vegetable oil
  • 1 tbsp water
  • 4 small tomatoes, cut into small wedges
  • 1 tsp garlic powder
  • ¼ tsp black pepper
  • 8 oz. cooked pasta (optional)

Pour a little oil in a saucepan or skillet and cook the sliced courgettes and onion together over a medium heat. Add a little water from time to time to prevent sticking. Add remaining ingredients and turn the heat to low stirring constantly for about 3-5 minutes. Serve with a little chopped cilantro as a side dish or over cooked pasta as a main meal.
