Microsoft Translator values your security and privacy when using the Translator features in Microsoft Office. Therefore, all communication between the Microsoft Office apps and the Microsoft Translator service use a secure, SSL encryption to send and receive translations.
Microsoft Office products are also set up as no-trace by default. With no trace, no portion of the translation request to Microsoft Translator will be logged, the submitted text will not be used to improve the quality of the Microsoft Translator service, and there will not be any record of any portion of the subscriber’s data in the Microsoft data centers.

Your IT department also has the ability to partially or completely control translation features. For example, controls can enable or disable a feature, control permissible language, etc.
To satisfy strict regulatory requirements, on premises translation service is available for the on premises version of SharePoint and Word.
